I'm not sure what are the best products to use, but FWI Home Depot sells carpet padding by the foot pretty cheap.
I'd recommended it because it made a big difference in how solid the car felt when I first got in (i.e. work boots din't feel like they were going to go through the pan), but each to there own. Also now is the time to check/correct rust and seal it with POR15 if there is going to be any sitting water.

I used lightweight constuction adhesive(not Liquidnails) from a caulk tube under the padding and a whole lot of 3M general purpose adhesive under the carpet.
Meanwhile other things are still happening.
