running too cool

I changed my timing belt and some other things using the timing belt/water pump super kit from Pelican. The kit came with a 71 degree thermostat for some reason (the t-stat on the car was 80 degrees). With the car back together, the temp. needle barely climbs up to the start of the blue zone. I've never seen it stay that cool. I've bled the system so I don't think the problem is an air bubble next to the temp. sensor. I'm going back to the original t-stat, but are there any other ideas?

get an ohm meter and test the resistance across the sensors. If you need the correct values I can provide them.
By the way, which car?

Sorry, never mind, the 87, since it is the only one with a timing belt, and you are in this forum.
