2.7 motor

I have recently aquired an 1988 325iC, and am planning a major restoration project- I had a 1986 325i, and although I loved the fuel economy, I always though it could use more power (I live in the Colorado mountains) I also may eventually use the car to pull a lightweight (under 1,000 lbs) tear drop camping trailer- my question is: how much modifying should i do when i take the motor apart for a rebuild? I've seen 3 litre "stroker" kits- good idea? Regardless, I'll "chip it", add headers/free flow and free flow intake; I'm no lead footer racer, but I think I'd like more torque/hp without killing fuel economy and reliablity
