I have a E36 318i 1998. Dealer told me that they won't change the fluid because it has over 185k, should I change it or not? should I use dexron III or Dexron VI, or ATF Syntectic mobil 1?

Yes, the dealers get scared when changing super-high mileage transmissions. I've heard of people occasionally having issues after they've changed the fluid, so the dealer's comments are not out of left field. As for the fluid type, it should say definitively which fluid to use on the plate that is attached to the side of your transmission.
