The K27HS is the best K27 to go with, of course it is all the most expensive.
I would go for 1 bar if you are using it on the street for short bursts. The HFS will supply your IC with cooler air when producing the top end power than say the 7200.
As Craig said, go for the LM1 so you can record data with the XD16 gauge. They offer the DL32 for data logging.
If you are not happy with the AFR's then depending on where in the rpm/load the problem is you may need some fuelling mods as previously mentioned if adjusting the CO screw doesn't help.
