I had similar issues with running way hot and turns out my thermostat in the wheel well was bad. Make sure that the thermostat is opening and sending opil to the front trombone or oil cooler. You can check this by feeling the oil lines in the front fender near the oil trombone and see if they feel hot. If not the thermostat is stuck closed.
It still runs hotter than my 911SC though. Think about it. If you are making 300hp versus 200hp most of that engine power is the 930 is gonna run alot hotter.
