IMO to add surface to the pedals becomes more on an interference (i.e. dangerous...) than an aid for the heel/toe.

If you realize, racing shoes are very narrow, precisely to have more room to play around. Somebody recommended to wear big shoes, I wouldn't.

Just practice, you'll get it.
