I would like 8.5 or 9 fronts and 10.5-11.0 inch rears in 17 inch size.
Eliminating the factory spacers is a plus but no big deal.
As far as actual backspace required, Jeff can't you just figure out what would be required to get the outer rim more or less flush with the fender lips. This would give the best look and widen the track of the car. This is best done on an actual car using a known quantity rim to measure from and determine the required offsets from there. Unless someone can give you hard numbers, you might have to provide some examplesettings or do it yourself.
I don't know how bad this would effect front end geometry but the rear should not matter.
