I have a mate who has a GT40 variant turbo on his 3.4ltr Motec build, his is a full pressure sensing set up. He's making 600bhp on an engine dyno at 1.2bar.
He's also going for 700bhp, engine dyno HP though not chassis rear wheel HP.
I think the main changes are individual throttle bodies, more radical cams, silver plated sealing rings and specially made heads (no idea what spec but they are special), bigger intercooler with Marston cores. I think the aim is for 1.5bar with the GT40 turbo, i suppose he could go for a bigger turbo and less boost but the lag would no doubt start getting too bad.

I think 700 rear wheel HP from a GT40 variant turbo isn't going to be achievable on 1.2bar of boost, it would need to be roughly 800 flywheel hp, god knows what boost level you would need for that but it would definitely need a bigger turbo!
