To make ride height and corner weighting easier, I would think about adjustable spring plates as well.

I would do one end at a time although there's probably no reason you couldn't do it all at once. Helps to keep parts and thoughts organized.

A level suface works best and that's for all four wheels. You may need to shim up one or more tire pads to get accurate readings. You'll also need to settle the suspension and roll the car off and on you pads.

For jack points, I would use the torsion tube in the rear and in the front... I can't remember. Maybe the the jack points just behind the front wheels.
