Running hot - thermostat

Hey guys, was out driving yesterday and the last couple times out I noticed the oil temp was a bit higher than I like it (like 10:00 on the temp guage).
So when I got out of the car last night after a 45 min drive I went to the passenger side to see how the oil lines were and you guessed it COLD!!!
So should I just replace the spring and piston in the thermostate ? Anyone ever done this ? OR should I get the new aftermarket replacement thermostate that Pelican sells?
