Great car. The heads look to be cut for a retaining ring. This is commonly called a flame ring. It helps seal the combustion chamber against leakage when high boost pressure leads to intense combustion pressure.

I suggest you find a machine shop that can cut the cylinder mating surfaces to match. This usually requires custom flame rings to be cut at the same time. This is a process exactly as you illustrated.

You might want to check with Mike at MBEnginneering in the UK. He is a contributor on this board. He would be relatively local and capable of the machine work.
