Could be several things.

When you say less 'bite', does the pedal get harder or softer with constant pressure? Harder would indicate a vacuum leak and softer a master cylinder or caliper leak.

If no significant change in pedal pressure or height, I would comment that the 'S' calipers are know to flex due their aluminum construction. You could always replace with a set of Carrera (84 -89) steel calipers which are the same size but have less tendency to flex.
