Unhappy Is the oil temp not getting to 180 degrees cause for concern ?

I heard that a 180 degree oil temperature is the magic number to burn out water vapor and prevent sludge from building up in the engine. The only problem is, in cooler weather it's hard to get the oil that hot especially on a short trip somewhere (less than an hour)

I'm running conventional oil, but would switching to synthetic oil eliminate the worry?

... (at the expense of possible leaking) ?
