Joe, IMHO you can plumb with any size you like, but I don't think either of the stock sizes are gonna be restrictive for your needs and using those would allow you to cut back on the number of transition adapters you'll need.

You should be able to find a K&N filter that will fit a 2.75" inlet pipe.
