+1 on normal temps vs rpms.

However, the first picture shows close to 250* and that's just TOO hot for comfort...

Is that backwards? It should be. If not, what do you do after driving it for a while...? stop and let it cool?

I believe most of us face that situation sooner or later, IMHO a front valance oil cooler is the proper solution - assuming the engine if fine. You can add scoops, air flow openings, fender oil coolers, fans... you name it... they all help a degree or two... don't waste time & $s and go with the valance oil cooler. M2c.
