I will make the example of the 9ff cars that have gotten a fair bit of press. They have a button on the steering wheel that the driver presses as he goes through the gears.
2nd gear limited at 600whp, 3rd limited at 750whp, 4th at 900whp, etc.
Do you think that with just more boost? Of course not. They have to adjust fuel and timing to match that increase in boost. More boost without more fuel is gonna go lean with huge egts, etc etc.

It is a system. If Eddie only dials back 5th gear boost once he is sure he beat the guy, wouldn't the car go stupid pig rich? Wouldn't it shoot flames or show some other external sign that the only change is 3-5 less psi of boost?

Now mind you Eddie has told me nothing of what his electronics are or exactly how he controls it. But I am pretty sure that he is controlling more than just boost when he makes changes on the fly.

Just changing boost is very 1986...
