Next time after you track/drive your yellow beast (before checking out the thermostat) see if both oil coolers are really hot. If they are then the thermostat is most likely to be working properly. Do you have fans for the oil cooler? If not then maybe add the fans? Also, are there any ducting to force the air through the oil coolers via the openings in the front bumper? This should help but am not sure if the openings in the front bumper are too small. Is the right oil cooler the same type and size at the left? If yes, then those should keep the temp in check. That's how mine are set up by the previous owner who tracked my car.
