Oil pressure question

I was out driving my 930 testing some recent work done when sitting at a light I noticed the oil pressure was extremely low. The gauge hardly registered a reading at idle. When I tap the accelerator to see if the gauge was working the oil pressure moved up with rpm increase, but didn't meet what I consider to be the minimum requirement of 10psi/1000 rpm. I cautiously drove home. I let the engine cool down and I started it up to see what idle oil pressure was. It popped right up to 25psi and when I blipped the throttle the oil pressure jumped up to about 50psi.

My oil temp when I was having a problem was a little over 210*f.

What would cause this? Oil is broken down at high temps? I am running VR-1 oil. I haven't had any problems in the past with this oil.

I'm afraid I will run a bearing dry and fry the motor and turbo for that matter.
