Can I remove the cams by backing off the rockers.

And if your going to replace the cams you need to have the rockers reground for best results.

Im just going to revisit my squish after a recent engine rebuild. I need to.adjust the valves and oil change. So why not pull the engine. Its just a few gaskets.I was never happy with 1.25 mm shims. Will just have to wrestle with the weight of the complete head assembly.

Pulling off the assembled heads with cam and rockers installed is fairly common practice. Especially if you are doing the tear down for a different reason. Like checking cylinder shims.
