I have fitted a C2Turbo/993 type oil filter plate in place of the oil cooler on my mid engined project car as shown in the Bruce Anderson book.
My query is do I use a standard 911 type thermostat , or do I need to use something else. I believe the 935 type filters like this used something special.

No internal t-stat is used w/ that set up. Just a stock 911 external tstat/pressure regulator works fine.

Sorry if I seem a bit dim, but does that mean I leave out the tstat next to the crankcase breather cover and make up a blanking plate.
For an external oil cooler I was intending to use a thermostatic sandwich plate on the C2 Turbo filter plate as atake off to cool in the scavange side. I should add the engine is based on a Euro'77 2.7s
In your opinions will this work?

Yes, This is what you need, near the bottom of the page "Engine Mounted Oil Filters & Thermostat Replacement"
