Why is the Aftermarket piston 89.98
There should not be that value.

What is it you are trying to determine? You have the measurement of the pistons. They seem to show up (at least very close) on your charts and a "2" for the Carrera RS chart. They also are the same size as the "1" on the 74-77 chart but so what. They are clearly 73 RS pistons. If you look at CIS pistons you'll see the difference.

There should not be a 73 Carrara 2.7 piston with 89.98 according porsche charts.

You're right the number is 89.975 for the maximum on the "2" size. That is what I mean't by "at least very close" in my post. You are looking at a .005mm difference.

Are you trying to use these? Are you trying to replace them? Are you trying to buy new cylinders? What are you trying to accomplish?
