The case oil thermostat

I’m swapping engines and the “new “engine was not run with the oil thermostat that is on the case. It was also not run with the engine oil cooler. I need to run the engine oil cooler to keep temps in line. Do I need to install an oil thermostat? This is a race car, track use only. If I need to run one can I use my “old thermostat”, the old engine “let go” so there is contamination in the case. Can this part be cleaned up or is time to buy a new one?

Once you reach 180 degrees the thermostat is open flow to the cooler. Below that..do you want to try to flow cold 40 weight through the cooler?
I would go for a different thermostat so there is no junk floating around the new engine.
