Since you just put the calipers on, and the pistons were fully sunk in their bores, etc., you'll need to work the pedal some to get them positioned - may need to bleed some more to remove trapped air after that. Makes sense (sorry if that is one of those "duhhhhh, I already know that, things")???

Butt to your question - the pedal on these things is very solid, even at the top of the throw, when all air is out of the system.
