Re-wiring is a daunting task. I moved the wiring from a crashed '86 to my RST build and it took me probably four months devoting 20hrs/wk to get sorted out, and that was with no motor, pedals and interior. Included some re-wiring, but not much. The biggest PITA is removing and replacing the wiring thru the tunnel and around the pedals area(which I think would have to be removed in your case).
I don't know if you can even find enough wire color combinations to make heads or tails of the end result.
Notwithstanding, you should contact Timmy2 for expert advice. He did a fabulous job which my engine re-wiring.
