Oil Level variations

I have a 1982 Euro 930 and am still getting used to some of the differences as compared to my 1972 911T.

One thing I notice is my oil level. The gauge and dip stick are close to the same, however after the oil temp increases and the thermostat opens to the front oil cooler I can watch the oil level in the tank move to full. I live in Tampa Florida and its summer so the temp comes up even on a short drive with little boost. Recently I have seen the temp get up around 230 degrees and I can feel the heat dissipating from the front cooler.

So back to my tank level question. After the oil is hot, say around 200, and the engine is at idle, say 850-900 RPM, what is the recommended proper level in the oil tank?

Documentation from the previous owner indicates the car is running Amsoil 10W/60 Race Synthetic.
