Swap Cayman and S Intake plenum 987.1
 

Is it possible to swap across the TB and Intake plenum from a 2007 Cayman S to the Cayman 2.7. Will I realize gains?

The 987 Gen 1 Caymans use the same throttle body, plenum and manifolds for either the 2.7 or 3.4 liter engine. The way to get gains there would be with an IPD plenum the uses the original 74mm throttle body or the version made for use with the 82mm GT3 throttle body.
