Oysters.. We'got oysters......

Dang.
Wife called this week about some fresh oysters. Local winery usually offers them on site- due to covid- wine / oyster takeout only.

Well Damn.

I over ordered, wanting briney oysters. Wife/neighbors wanted smoother oysters.

I said- eff' it order alot, and was concerned we ordered way too many.

WAY TOO MANY!

Neighbors came over, brought real shucking knives. All the sauces. They are pros.

At end of night- No oysters left. I've only got three or four puncture wounds- will count in morning.

Those suckers go down quick!

Way back....ya didn't eat 'em in months without an R in them... now they farm them and it's year round. Years ago my buddy who lived outside Richmond called me one Sat. morning... let's go to the Oyster Festval! Some small place near the lower Chesapeake in VA. So I change the oil in my 911 and drive up to his place... we'd hit it on Sunday... yay! Sun. morning as we're getting closer we keep meeting lots of RV's, etc. ...when we got there... acres of empty fields (parking lots), full trash cans, and trash crews... after a typical 3 day festval. We missed it by one day....no oysters fer us

I still give him crap about it

Love arsters too but what’s the story with how farming them makes them any safer in warm water?

Well i had #6 adjusted perfectly but then just before i tightened it a butterfly in Zimbabwe farted and now i have to start all over again!

The month in "R" thing was something we wondered about last night. Decided in the name of science we needed to be guinea pigs and take one for the name of science.

Dang things weren't going to eat themselves. Still here (so far).

Only one painful puncture wound this am. Not from the knive slipping and hitting the gloved hand, but from the shell breaking and my knife hand slamming into the sharp edge of the broken shell. Need to up my technique. Not an expert!

Now I have to get some oysters. Local restaurant used to have Monday dollar night with great local oysters. I hope they bring it back.

I have not had any oysters in a long time, but I remember the last time. We picked the bed, shucked em and ate them all. Fishing was slow that day, but we had enough trout, reds, and oysters to feed the 7 of us. Great time celebrating the life of a good friend gone.

I have to say the best oysters I've ever had were when we drove over to Stinson Beach to drive up the coast and came upon Hog Island Oyster Farm. Grilled with a chile/cilantro sauce, man were they good!

I didn't mean they were related. I just know the oyster places in FL, 'Nawlins, and here don't close in Mayer for four months. Mebbe beer makes it OK now ?

That sounds yummy.

First raw oysters for me were at Union Oyster House near Faneuil hall as a young man. I was freaked out but had a few beers and there was no problem. I have had them on occasion since.

I always chew a couple of them. Is that allowed?

I think the warmer months are an oysters breeding season which changes texture and flavor. (?)

I don’t think it’s a safety issue. Could be wrong.

Maybe it was due to less than perfect refrigeration when oysters first got commercialized. I have gotten some great oysters in Boston and Portland, Maine. Weary about getting them in Texas.

The month in "R" thing is based on the life cycle of oysters.

How to put this delicately and make it safe for all ages... um they are having sex in the summer, so...

well, they don't taste as good.


Red tides are more likely in warmer months but the govt. should be monitoring that so not much risk for you.


BTW, a great book (tome but well written) on oysters is "Life on the Half Shell"

ah - turns out nope - in the 1800s NYC harbor had lots and lots of oysters - some a foot long - but France had depleter their oyster beds, so we sent oysters over to France on sailing ships

they will last many days in their shells - it's why they have shell, right? they live in the inter-tidal zone and get exposed to no water every day

Texas has a gulf coast and plenty of oyster - obviously not as good as going to Louisiana for oysters

I used to eat 'em raw decades ago....on the half-shell wif hot sauce & lemon juice...riding a saltine. I gots skeered of that tho' .... now steamed
