Interesting Riddle
 
Yeah I think I got it wrong the first time around.

Let's see how fast one of you geniuses can get it.

Fred brings home 100 pounds of potatoes, which (being purely mathematical potatoes) consist of 99 percent water. He then leaves them outside overnight so that they consist of 98 percent water. What is their new weight?

by volume would change the math and I think that's the trick in the question

Potato = 99% water, 1% starch

1 lb Starch = 1%, total = 100 lbs --> (99 lbs Water)
1 lb Starch = 2%, total = 50 lbs --> (48 lbs Water)

I think you need 49 lbs of water, plus 1 lbs of starch to get 50 lbs.

98% water is 49 lbs of water and 1 lbs of starch, total new weight is 50 lbs.

1/50th is 2%...water is 98%...
