Europe Bike/Barge Recommendations?

We have a small (3 couples) group working on planning a Europe bike/barge trip.

I will appreciate any thoughts/recommendations for specific boat, routes, cities, time of year/etc.

We are thinking along these lines:
- ~7 days
- comfort plus boat
- small boat (20-30 guests)
- Bruges was mentioned as a good stop
- Probably Russia is not at the top of the list
- on a given day of riding a short and long bike route is offered
- upgraded bikes and e-bikes available
