Yep. When we had chickens we would write the collection date on the ones we planned on boiling and wait two weeks. We never found any way to peel a fresh egg.

you know how to tell if an egg is boiled? a hard boiled egg will spin on the counter like a top where as the unboiled egg will wobble and not spin but for a couple seconds.

There was an article in the NYTIMES a few months ago. A chef had tried all different cooking variations and found that steaming them worked best. I tried it and they did peel perfectly. It was super simple.

Well, I got #1 and #2, right. should have quit right there. But I didn't.
So i guess having eggs that are a couple of weeks old seems to help. The problem with that is that we don't eat eggs very often so we don't usually have them in the fridge. We buy them when we're going to eat them. I'll try some of the other suggestions next time. If there is a next time. Just so you know, if these suggestions do work, you guys ARE NOT getting any credit!SmileWavy

I agree with this...something has changed in the eggs or shell quality. When I was younger I could peel any egg flawlessly. Nowdays it's 50/50 on shredding the outer white when peeling. Nothing changed in my boiling/handling technique.

The ones from your youth were probably not as fresh. ;)
