Caesar salad dressing fail
 
Okay my fellow birds, let’s see if the brain trust has a solution for this.
Making Caesar dressing, it separates while pouring the oil.
Wtf? Does it sometimes. Toss it. Do again and it’s fine. I used to do it by hand and now the better half is having the same problem using a silver bullet mixer.
Is it just us?

I was taught to make Cesar by a girlfriend 40 years ago, Still have the wooden bowl, even after being married thrice.
To Wit"
Juice from one big lemon, with half that amount of balsamic vinegar. hold seperately.

Peel and press,chop fine 2-5 cloves of garlic.
2-3 Oz olive oil pressed by virgin thighs.
i teaspoon finely ground pepper
i teaspoon mouseturd powder
3-5 shots of woorchestershire sauce
2 egg yolks.
finely chopped can of anchovies - or anchovie paste - to taste

Mix oil ingredients.

shread one head of romaine lettuce.

add vinegar lemmon mix, toss.

Add oil mix, toss

Add 3-7 oz Good quality Shreaded/shaved Parmesian cheese - TOSS


Adjust recipe to taste. I make it stout and refer to it as my colon cleansing program.

Feel free to add or substitute spinach, tomatoes, avocados, crumbled bacon, Kale, or watercress, crispied bit of chicken, slivers of onion, or Rutabagas.

just whip the oil back into the emulsion

pour your oil in a pencil thin line and whisk quickly to avoid separation .

I'm no expert, but I think what you want to do is emulsify.
Maybe some tips that can help here.

You haven't really experienced a Caesar Salad till you have had it served to you In Baja were it was invented. (Tijuana to be specific)
The El Rey Sol in Ensenada has been serving them table side for 50 years .
Suggest a "Mexican Coffee" for dessert.

They also make it tableside at The Sage Room at Harvey's Lake Tahoe. Great with the Chateaubriand for two.
