What is Your Favorite BBQ or Grilling Accessory?

I have been loving the Big Green Egg that was an amazing Kijiji find a few months ago but have hated the meat thermometers that I was using.
One was 10 F degrees off the mark and I had trouble getting my money back on that one. Ended up with one overdone boneless pork rib roast.

Did some searching around and purchased a Thermapen superfast thermometer.
Really fast readings(3 seconds for an accurate temperature) and really accurate.
Very small diameter stem and only needs to be inserted 1/8 of an inch into the meat so perfect for thin cuts like fish.

Got it in the mail today and used it tonight and the lord as my witness I will never BBQ without it again.

What BBQ tool or accessory can you not live without?

For roasts my rotisserie is the schizzle. I have been cooking long enough that I can tell when it's done visually.

Cooking on the egg is still a pretty new and (jeez I'm getting old) exciting thing for me. I think that things look different while cooking and I hate to miss the temperature on a high dollar chunk of a something that was formally breathing!
You can't uncook overdone food.

Did a quick pork tenderloin tonight on it and it was bang on.

Radio meat thermometer with the remote display that sits by me whilst on the couch with a beverage in hand watching the game.

Set the temp 10 degrees below desired and when the beeper goes off, it's time to remove. Perfect for whole chicken, turkey, prime rib and such. No lid lifting, unless to add some more coals.

Not really an accessory but more of an option...my new Weber Summit has a burner solely dedicated to the smoker box, which makes smoking much easier and much more effective....love it!

I got me one of them meat thermo-meter forks.

I also got one of them wireless thermometers, used it twice in 5 years.
Darn thing was a PITA trying to sync the transmitter and reciever, wasn't worth the trouble.
