Cooler weather means one thing…

Not cool sweaters, beanies or Hungry fall largemouth bass.

To me it means. Slow cooking! I’ve been perfecting my personal movement towards “slow and low “ for a long time. I don’t use a slow cooker. My tool is my cast iron Dutch oven placed into my 300 deg oven. I need to cooler weather so I don’t have to suffer in a hot kitchen.

This morning I cracked open a beer at 8:00 am. My wife looked at me and said, “ oh what are you cooking?!” Beer goes in the braise.

Tonight. Chili Colorado burritos. I’m gonna bolster the health intake by adding in butternut squash. Hello Autumn!!!

(Tomorrow I’ll go see if the bass are transitioning to the fall pattern)

It’s an intense process.

Starts with a bag of my red sauce where I make 1.5 gallons of it twice annually. I freeze it into quart bags.

I’ll type up the sauce recipe and email it to you. After that it is basically, brown meat, brown onions and dump it all in.

Wish I could mail you a bag of this.

My wife, and I just picked up several bags of soup mix from the Amish bulk food store in middle Ohio. I look forward to simmering on top of our woodstove this fall, and served with homeade sourdough bread.
