On and off hobby. Currently off since I have my hands full in the grage right now. I brew with extracts and limited whole grains. I've made a few good stouts and heavy beers, but correct pilsners etc. seem to elude me.

Got any good recipes for a proper Hefeweizen?

The yeast is important.
The ones I've tried in our home brewing co-op, all missed those subtle vanilla, banana, and clove overtones.

Next batch, I'm going to try pitching Wyeast 3068.
