I have a couple pieces of copper cookware. And a stainless steel oblong fish pan and they are a bicht for sticking, burning and cleaning. I should look up how to defeat that but they end up being decorative while I use modern and classic cookware. No bare metal except cast iron. That's my wife's thing, I avoid those too.

If I add the oil to the pan and heat the pan (and the oil with it) then I have a problem with stainless sticking. I can cook eggs in stainless so that when I'm done, you almost can't tell that I cooked anything in it. |
I'll try that.

Heat it till a drop of water dances on the surface. then add your oil
