It's Corn on the Cob time!
Can't drive a mile around here without seeing a sign for Corn on the Cob For Sale.
Saw this way of fixing it on the net and tried it yesterday. Boil it in water with salt, milk, and butter. It's good. I'm sure there are many other ways to prepare it also. Ha! Ysterday I saw a tray like that with four ears in it for $5.00. No way would I pay that. My current favorite way to cook ears of corn is in the microwave. Trim the leaves and stem, put them in the oven for about two + minutes per ear, cut off the base, and work the husk and silk off by pulling on the other end. Works great.

I had someone tell me that the easiest way to remove the silk is to use a rubber drawer liner. They say the silk sticks to it easily. (I haven't tried it yet) |
Just had our first corn of the season last night....ate 3 ears. yum.

mid 1970's in Seattle local farms corn was 10 ears a $1.
Still remember an assembly line of shucking and cutting whole kernels off to ziplock into freezer bags with a dab of sugar. Mom would buy 50 at a time. |

Better than I do. However... what I do is leave the leaves on, splash water over them then put them on the BBQ. I'll try your method next time. |
This is way we do it. We're talking steam here. Pot with tight lid. Bare corn (no husks) in pot, warm water, maybe 1 inch, not much more. Corn in pot. Lid on tight. Heat on high, bring to high boil. Once it boils maybe 2 minutes, (a little more if you're distracted) maximum. Corn is done. Remove with tongs and put lots of butter on it. Yum.

peel back but leave husk intact.
remove silk. butter and season. wrap husk back up around. microwave for 4-5 minutes. steamed to perfection. for gods sake don't boil it immersed or you wash away all the flavors and sugars. |
Well, that's another way, microwave. We will have have to try that sometime, although it can change food texture.

There’s a farm less than a mile from my place. He sells corn freshly picked. He just leaves it at a stand with a cash box. $4 for half a dozen, .75 for one cob. Well buy from him until he runs out or when we’re sick of corn.

Some people take the time to 'saw the corn off' with a knife before eating it.
I think it spoils the taste, for some reason. (Maybe because I can't get as much butter in my mouth as when I attack the cob.) :D |
A few years ago I was at a friends house she cooked the corn in the microwave for 3 min
I said no way but you know what its as good as boiled corn and super easy Leave corn in husk throw in nuke,peel, eat it has dramatically increased my consumption of corn Which I love!! Try it you'll love it Corn Is summer Summer is great! |

Our second planting of corn is just ripening now. Had some last night. We prep it a few different ways.
Steam it of course - 1/2 inch of boiling water in a pan with a good lid. 5 minutes max Nuke it - I do it when I'm in a hurry and just doing one ear, but can't get used to this method. It tastes OK but it just seems wrong Fry it in butter - cut it off the cob and fry it in butter, salt, and black pepper until it starts to brown. This really brings out the sugar Fry it with spices - Some dried serranos, small amount of garlic, butter - whatever ... So far I've frozen 12 2-cup packages of corn cut off the cob for the winter. If the raccoons leave any of the second planting I'll freeze some more. This is also the time of year for 'mater sammiches. Take a thick center slice out of a good beefsteak tomato, sized to fit the bread - throw the rest of the tomato out for the chickens. Mayo, salt, and pepper on a decent white bread, I like what the bakeries call "Italian." It's basically Wonder bread with a little more body. "Good" bread just isn't right for a proper 'mater sammich. Instant pot- 2min quick release.
Put the corn on a rack above about 1/2" water in the pot. Basically steams it. Easy peasy. Really good gary |
My wife uses the microwave to cook ours now. She cuts it off the cob.

I like to soak the ears in their husks in lightly salted water then slow cook them on a low fire on the grill.

A southern delicacy is "Silver Queen" ... for decades... only locally grown and eaten .... can be pulled off the stalk and eaten in the field. It's that tender & sweet but begins to degrade at that very moment. Too good to waste on moonshine :)

^^^ We had 'Silver Queen' up here years ago.....it was the best.
Pioneer Seed Corn gave away packets free to farmers that bought their field corn. Around here, they quit supplying it and the replacements are not as good as Silver Queen was. |

Yesterday I was out and about and looked for any stands, no luck except for a "designer" farm that had it for $2 and ear... Nope, I'll wait another week or 2 and get 3 for $2 or less. Seems the 4 for a dollar days are gone here at least. Then there's the Strawberries, Blueberries, Nectarines, Peaches (Millions of Peaches, but not for free) Love this time of year!! |
Picked up the last dozen for the year. The farm I buy from is closing for the season tomorrow. I removed the husks and used my vacuum sealer and put them in the freezer.
I’m curious to see if it will work. Not sure if others mentioned but my friends mother suggested we microwave the cobs, 2.5 minutes wrapped in a wet paper towel. Unreal, it tasted better than steaming. http://forums.pelicanparts.com/uploa...1726281060.jpg |

Just finished a half dozen ears of Nirvana from our Farmer's Market. It used to be Marai but that farm has shut down, it seems.
Nuke/steam method. No butter, just a bit of black pepper. Also, damn good eaten raw. I need to grab some more before it is done until next year in late summer. May need to go direct to the farm and pick it myself. |
