Peppermint oil does a pretty good job with the deer up here. It can be stupid expensive, but I found a 16 oz. bottle of NATURES STAR brand that was reasonably priced on Amazon. Also spray it around the garage to keep mice out. Its concentrate so I mix it in a sprayer bottle with water. It separates so it needs to be shook often when applying.

I tear rags into strips, tie it on the tomato trainer deals and spray the rags once a week or so. You could tie it to the branches and just spray it within a couple inches of the branch down as to not get it on the tree. It eventually evaporates out in the sun, so reapplication is required.

Sorry about your Japanese Maple. We have this little gem that came with the house/yard when we bought our house 6 years ago. I just trimmed the tips of the branches to get them up off the ground. Ours starts out a deep reddish, burgundy color and then it turns a sort of gold color later in the summer. I was under it when trimming and thought it was a nice view that probably no one has ever seen before, felt like I was under a big tree. This little thing must've been really cared for and shaped.
