You’re doing a great job. I was kidding about the window.
BTW, your level is upside down. 😬

That's because I was checking the level of the ceiling..... :)

The old kitchen is "cool" (I do like that style--it's very Mexican). What you have done is quite beautiful. Nice work! It's good to see someone putting in so much effort into a property that they intend to use as a rental.

I am trying to keep the Spanish style throughout the house, but I wanted the kitchen to be a bit modern. I was afraid to try and re-do the tile in a Spanish style as I am terrible about picking things and this is permanent. However, I am putting in 12" square Saltillo tile and I'm going to eventually tile the risers on the staircase in a talavera tile.
BTW - the picture of the old kitchen was AI fixed by the realtor. The actual condition was terrible. Most of the floor tiles were seriously scuffed or cracked, many of the counter tiles were loose and they were tiled on top of old tiles. The dishwasher did not work and the sink drain leaked bad. This is going to be a traveling nurse (13wk) rental property - sexy nurse roomates, hoprfully.

I love the Mexican tile in the old kitchen, but I understand the desire to change things. I love the saltillo tile less, although the more ornate shape is better than plain square saltillo. The walnut cabinets and black appliances would not be my choice with the rest. The new window is a HUGE improvement over the old windows and nook.
I've been to southern (Andalucia) Spain and southern Portugal, and LOVE the tile that is commonly used there for everything from counter tops to floors, to the entire outside of a home (that's a tile and grout job that I don't want to do!).

The cabinet over the stove had a 14" vent in the middle. On the back wall, there was one single overhead cabinet that was 30" wide and made with fence boards. Basically, you would need to store your plates and wine glasses under the disposal - gross. For the original brown cabinets - most had water damage as there as a finger size hole in the drainpipe.
