What is your favorite German mustard?
 

OK, I had the good fortune to visit Germany twice last year, and was once again drawn to the unique taste of Weisswurst, which is what the Bavarians eat for breakfast.

As an accompaniment I would eat these Wursten with mustard. My favorite of all was Develey Susser Senf, which is a dark sweet mustard. Also nice is the Devey Weisswurst Senf which is a little grainier.

Does anyone have a particular German mustard they prefer? The Develey stuff is not available here in the USA. Thomy susser senf can be had, along with Loewensenf. (I think Dusseldorfer Lowensenf GmbH actually bought Develey Senf & Feinkost GmbH, so they are the same company, but I don't know if the mustard is the same, I wouldn't think so.)

Has anyone done a side-by-side taste test of the German mustards against domestic "German style?" Here in New York we can get Schaller & Weber, Inglehoffer, Boar's Head and a couple others, which going by my palate memory at least ain't cuttin' it. The mustard, that is.

How about some input from our European bretheren, too?

The only bavarian mustards I've had have come from a tube, not exactly top-shelf senf. What is with the use of tubes over there? Mustard, mayo, god knows what else. Wacky Germans...

Loewensenf is my favorite. The stuff made here, Boar,Inglehofer and others 'just don't cut the mustard'. Loewensenf is available in tubes in Texas.Did you try 'Currywurst' it's made with Ketchup mixed with a bit of curry and other spices. And for brats there is 'Thuringers' those I haven't been able to find or anything comparable either. Okay now I'm hungry.

All of these come from German Deli, based in Dallas Texas. Run by Inga, a very nice woman from Bavaria. I met her years ago when she first started up the business, now its booming. A very good source for German foods and spices of all sorts. Excellent service and shipping. You will not be unhappy!

If you really like German food, try "rinder-rouladen." These are beef rolls, with a sausage link, bacon and onion inside. Swab the beef with mustard then roll it up around the sausage. Spicy sausage is better for me, but your choice. Then tie it off with string or stick a skewer in it. Put in a pan and brown on the outside, then bake for a while in the oven until they are tender. Pull these puppies out and eat with German beer and potatos and you will be in heaven.
