Tom, I made friends with Mr. Jeanminette in New Iberia. brought him some moonshine and every time I go there for cracklins he loads me down with fresh sausage, bodin and other stuff. brings it to my truck and insists I take it no charge.. Creole caterer with many awards for his food. My daughter calls now and then for care packages from here. says Texas food is so bland and as you know.. there's nothing like cajun cooking.

One of our old instructors in Dallas is a coon-a$$ and he starts the classes off by saying "we can sit here in class or we can go to my farm 20 miles East and hunt, fish and talk about things there. We then end up with some of my Gumbo and when you have all passed the exam its time for a sip of something fine".... No one ever wanted to stay in the classroom after that. Mr. LeBlanc is a man after my heart!

Would like to give my Pelican Brothers a little secret of Mine. Whenever I make a trip to Houston, I stop at a small but famous smokehouse in Hilje Texas called Prasek's. Very good quality and I would recommend the Venison and Buffalo jerky. My favorite is the thin unpeppered Beef. If you go to their website you can order what you would like. You Will not be disappointed in their quality. If you place an order make sure you get at least one link of the dried Pork/Beef Jalapeno sausage ( It is great with cheese and crackers, you Willl order more!). The beef sticks are great for the kids. You can also order Mesquite bean Jelly and Chilepotine Jelly (Spelled right?) They are great! Make sure you order your significant other some of their single size butter milk pies. I am not affiliated with this business, but drop at least $150. on each visit...... Their website is praseks.com
