Tom, I made friends with Mr. Jeanminette in New Iberia. brought him some moonshine and every time I go there for cracklins he loads me down with fresh sausage, bodin and other stuff. brings it to my truck and insists I take it no charge.. Creole caterer with many awards for his food. My daughter calls now and then for care packages from here. says Texas food is so bland and as you know.. there's nothing like cajun cooking.

Off Ramp,

Everyone has to die of something.

You will probably die when someone shoots you after a Craigs List incident.

The rest of us would prefer to die happy, fat and sassy... PS, my cholesterol was 165 the last time I checked it so not to worry.

Johnco,

Totally agree and there is nothing like cajun cooking. One of our old instructors in Dallas is a coon-a$$ and he starts the classes off by saying "we can sit here in class or we can go to my farm 20 miles East and hunt, fish and talk about things there. We then end up with some of my Gumbo and when you have all passed the exam its time for a sip of something fine"....

No one ever wanted to stay in the classroom after that. Mr. LeBlanc is a man after my heart!

I dunno...we usually wait until Evren or Ruki are going to be in the USA, then mail by priority mail. We think overseas may take too long. Emmons jerky mails well...only after opening the vacuum pack do they suggest keeping it in the fridge. There, it'll keep for weeks, though it seldom lasts longer than a few days.

One stop Evren had to make when he was here this summer was Emmons to stock up on Buffalo jerky. Driving back from there, a message came in on his blackberry...it was his bank, telling him that his credit card was being used in Oregon, they wondering if it was him.

(edit) If any nation's customs used a drug or explosives sniffing dog??? I'd think jerky would drive a dog nutzo! Might be fun to try...

I don't see why jerky should be unhealthy. My homemade jerky is lean beef and some sauces, the actual amount of sauce per piece is pretty small, so it is basically just eating flank steak.

Would like to give my Pelican Brothers a little secret of Mine. Whenever I make a trip to Houston, I stop at a small but famous smokehouse in Hilje Texas called Prasek's. Very good quality and I would recommend the Venison and Buffalo jerky. My favorite is the thin unpeppered Beef. If you go to their website you can order what you would like. You Will not be disappointed in their quality. If you place an order make sure you get at least one link of the dried Pork/Beef Jalapeno sausage ( It is great with cheese and crackers, you Willl order more!). The beef sticks are great for the kids. You can also order Mesquite bean Jelly and Chilepotine Jelly (Spelled right?) They are great! Make sure you order your significant other some of their single size butter milk pies. I am not affiliated with this business, but drop at least $150. on each visit...... Their website is praseks.com

You may need to rephrase that. Not sure OR gets irony. He's a simple guy.

Teriyaki, pineapple, Montreal Steak seasoning, grated orange peel and a little cayenne.

Marinade the slices and go!

Dottore,
Johnco is in Morgan City. Which is about an hour drive away. Gotta love New Iberia. Hot Sauce and Nutria!
