The BBQ is Running HOT!!!
This mornining I got the BBQ up and running....am cooking 3 Rack of Pork Spareribs....
First I I peal off the Menbrane on the back side of the ribs, then sprinkle them with the following spices, and let them sit for an hour or teo to meld the flavors...over night woprks too. Salt Pepper Garlic Powder Onion Powder Cumin Powder Paprika Chili Powder Brown Sugar Then I light my fire, first using some Mesquite Hardwood Charcoal as a base to light my Logs and then put some Oak Logs on. I then let them burn down so that the smoke doesn't impart a bitter taste, put in a bowl of hot water to provide moisture to the smoking chamber and let them smoke away for 3 or 4 hours at 250*. Mid way through the smoking process I Mop my Ribs with... The above spices plus Apple Juice, Cider Vinegar, a touch of Vegetable Oil which I bring to a boil on the stove. ![]() ![]() ![]() ![]()

The END PRODUCT....By using Oak Wood I don't get an overpowering smoke flavor, just a nice subtle smoke flavor that has a hint of nut taste on the pallet....nice and tender...Ummmm

Give at least one piece of that excellent rack to Fintstone. He can beam it my direction as well as to the Middle East. Know that the locals there would just love the smell, taste and visuals of a slab of ribs! ![]()

BTW if ya are SERIOUS about turning out a good product don't waste yer time with a cheapie flimisy metal thing smoker...step up and spend the dinero and buy one that is made of 1/4" steel plate and 1/2" on the firebox.
You will find that the product is consistantly better than a more of a hit an miss with the cheapie. Consistant temp and less fuel used that can dry out the meat... Harwood Charcoal is the only way to fly...I have recently gotten a batch of Harwood OAK...burns hot and clean for grilling..won't even go back to Harwood Mesquite if I can keep a supply. Once ya get a good quality smoker ya can compete with the best BBQ in the world..That is just a fact of life. I think David Klose of Houston is one of the best mfg of units out there.

damn! is that a klose smoker?
i want one! i like the square fire box! seems to make cleaning out easier. can you use the main box like a regular grill? or will you need two tools? ribs look great tabby. to be perfectly honest, i love cooking ribs more than i like eating them...they are much to rich for me.

That does not look like a Wustoff Classic. I love my Wustoff GP. But that looks like a Sheffield or something from Target. The Wustoff has a thinner handle.
NICE rub recipe though! I think I'll have to do some bbq when the weather cools off. |
