BBQ Rigs
Walked down the hill today and it seems the national BBQ championships are being held there as I type, the smell of brisket everywhere.
Spotted a couple of very senior rigs. Anyone have something similar? ![]()

Yeah, where is the converted garbage truck, or the faux cop sedan with the pit in the trunk.
For utilitarian I don't like either of those. I prefer the ones that you stand in the middle of the trailer and the pit is on one side, but those don't tow as well, unless you put something on the other side to counter balance the pit. Had a buddy in Texas with a few nice pits built on trailers. Having a seperate firebox also gives you a cook top of sorts. If you are clever, you can even have it heat water to make clean up a little easier. Those things are handy as heck if you have a big group of friends. Everyone brings some meat, something to drink and maybe you cook them some beans or something. Just the ticket for a camping weekend on the Frio River.

The second unit is definately a David Klose. He makes just about the best BBq unit out there. The Johnsonville Sausage Co has a gasoline tanker truck sized unit built by Klose for promotion.

I have the Klose 20 x 36 pipe smoker with 1/2" steel plate firebox. Thing weighs 600 lbs.

BBQ = fire + meat, caveman style cavemen didn't have 4 hours to waste on friggin ribs, neither do i meat should not fall off bone, it's not a stew, it's barbeque frankly, i wonder why them ovenchimneythings aren't painted pink...

That's like saying it aint' chili if it has beans in it (which is a correct statement).
In TX, we smoke our meat in a pit with an offset fire box (see Tabs' threads on the subject). We call smoked meat BBQ. When we grill meat over an open flame with the meat positioned directly above said flame, we call that grillin'!

The only thing that Klose has over your Pit is the refinements that Klose incorporates over 20 years of experience of building them. Plus the feedback he gets from his clients....The thing that makes a Klose unit great are those little refinements.
