If you've never tried Costco's steaks, don't knock them. I've had inch thick ones that I've cooked that are better then eating out. There has been other post on the off topic about the choice of cuts that Costco gets.

Our local Stater Bros. supermarket rivals only our local butcher in meat quality. They have real meat cutters standing behind the counter to fill your order. I can take what is packaged or have them cut something to my tastes. Pretty amazing to get that kind of service at supermarket prices. They will even plastic wrap the meat before the butcher paper for better freezing if asked.

I think Stater Bros is SoCal only.

actually, all of the good stuff has been off the cow for a long time. it is call aging. it is what makes the beef, very expensive. fresh off the cow would suck.

Meat from a very fresh kill is actually great. The problem is after several hours rigor mortis toughens the meat. So aged meat is what most of us eat after natural occuring enzymes tenderize it at low temperature.

It's either eat it immediately or wait a couple weeks.

I received a gift certificate for Omaha Steaks last year, I chose whatever sampler pack that used up the certificate...

Not impressed at all...

Then again I'm spoiled.. just about all the beef I eat comes from Lobels. I dont consume beef frequently though... maybe once a week, so when I do indulge.. it will be a super piece, just had a nice hanger steak with my bro y madre..

Omaha Steaks... blech...

They are pretty good if they are free. I do like getting them as a gift they are frozen and small. The local butcher shop selling aged beef way better. Costco will do in a pinch but not like the old fashioned western butcher shop. Like a candy store of fleshy treats.

+1 and they now carry Prime too, at least in the stores in TX.

I usually buy ribeye in the bulk piece, cut it into steaks and roasts. Sometimes the local grocery store can beat the price per pound, but the steaks from Costco are the best.

Anyone dry-age beef at home? The Wall Street Journal had an article on it last year. I tried it and it does work well.

This must be a regional thing, quite possibly the toughest steak I ever tried to consume was from Costco.

Yes, for 30 days, and it is excellent.

KT

These steaks are made lean by cutting the fat out of rich people. They are OK, but not quite "right".

On the Omaha topic we've had them in the past a very few times and they were OK, but expensive for what you get. I prefer the local sales and being able to check it in person.

Steaks? With Big Bob Gibson's and Greenbriar being so close, I'd probably NEVER eat steak!;)

Well, there's that......good stuff. Of course it's not like you're lacking for good food down your direction, either.

True dat! Only cow better is my pappa in laws - Costco is ghe best place for meat hands and (hoof) down.

Hugh, if you are ever going from southern to northern Cali in a car, go to Harris Ranch for steaks, seriously. Good as The Flame in Melbeta, Nebraska, and that is saying something. They have a butcher there who knows his business. Wonder if you can buy a few steaks to go from those guys, betcha could

Never been frozen is the best for pretty much any meat if you ask me.
