Time for chili!
 
That Chili Dog thread really got me thinkin, so I went for it.

YUM. I hope. We'll see in a few hours. I like "stuff" in my chili. Sorry, Texans.

Ground Beef,
Tomato Sauce,
1 can of diced tomatoes,
1 small can of green diced green chiles,
a White Onion,
3 Jalapenos
5 stalks of Celery (Yes, Celery!)
Pinto Beans,
Kidney Beans,
Most of a can of Tecate.
And some "Carroll Shelby's" Chili starter. SEE, it's almost car-related, even.

Looks GREAT, but down here we call that "Taco Soup" instead of chili;)

I grew up on chili that came from my dad's side of the family. It was "the other" famous chili, Cincinatti chili. And even I think that looks a bit odd.

They've got some good chili here in TX too.

I have "stuff" in my chili too, but my stuff is at least cooked. You can't tell that my onions are onions as easily.

That's some odd looking chili, but it sounds tasty. Cook it some more and it'll probably be even better once the flavor's get cooked through.

Don't worry, guys, I don't expect it to be ready to go until tomorrow morning sometime. Crock pot on HIGH for a few hours, then LOW overnight. All those pesky vegetables won't be as intimidating by then.

I love Cincinatti Chili, and even Covington Chili. As long as the spaghetti is AL DENTE.

I like it with beef and pork, chopped up, not ground, pintos, plenty of peppers and onions, not crazy about it if there is enough cinnamon in there to be able to tell it is there.

Beer is good for a lot of things in cooking. I like regular old Coors beer for this sort of thing generally

I made a batch a couple of weeks ago, and got heavy handed on the cinnamon (I normally use a "pinch")...yep, I could tell it was there, and the net result wasn't nearly as good as usual. I also mix in chunks of meat (along with ground), and lots of peppers (jalepeno, habenero, green & red bell) & onions, etc, and OH NO, I use light & dark kidney beans, black beans too :). It might not be "chili", but after 10-12 hours in a crock pot, it's mmmmm good!

Well, I work 6:30 to 12 this morning, and I turned the crock pot off overnight, and put it on low this morning. So, life will be pretty sweet by about 12:30, I bet.

Step aside cowboys, it's time for chili.

Overnite in the crockpot turned that hamburger soup into some fine chili. All you vegetable haters don't have to worry anymore, most of the color has been cooked out of those suckers.

I like to roast the peppers, especially if I have some pecan wood from my buddy to soak in water and smoke them, especially the jalapenos; speakin' o' which, I need to go check the pepper situation following the recent rain.
