Out-of-state moto purchase/shipping...what's next?

'Need some sage advice, please.

We have reached an agreement on price. $2,800.
Bike is in AZ...to be shipped to OR.
'Have 2 good prices from transporters via UShip.com. - neither has been accepted so far.
How do I pay for this bike?
Send the buyer a check for small portion of total amount now...then the rest later upon transporter pick-up?
Enroll some kind of escrow service?

I need some info on this...'never done before.

I sold off 9 bikes in the past year and all but 2 went out of state/country. Buyer always sent a cashier's check or wire and then I sent the title overnight. Bike was usually picked up by the shipper within a week or two but one lingered for about 2 months.
