Want you Yankees to try this recipe...
 
Some good stuff, but don't tell the wife or kids what it is....

What you need...

Couple pds of Beef Cheeks...

Flour Tortillas

Tomatoes

Yellow onions

Serano peppers

fresh Cilantro

Lemons


First off take your beef cheeks and throw them in the crock pot on low, put in a couple coffee cups of water and sprinkle cheeks with Lowrys seasoned salt. Cover and let cook over night. I usually put mine on about 10pm and let them cook till 8-9 in the morning. This is usually a recipe that I do on a Friday night for Saturday morning tacos...

In the morning I make my pico de gallo.... First I dice up a bout a pound or so of tomatoes and then I dice up and throw in a large sweet yellow onion... I chop up a couple of serrano peppers and add them to the mix. I then take my bunch of cilantro open it and rinse it off real good... chop it up and throw it in with the rest...

Salt, pepper, garlic powder and fresh lemon juice to taste and then put in the fridge....

Next I pull the lid off the crock pot and very carefully (as it will be falling apart) pull my cheeks out and place in a seperate pan... I take a fork and start stirring the meat until it is all seperated and looks like pulled pork.

Toast my tortillas and get ready for some good eating....

Those in the know, know what I am talking about....

Like having the best roast beef you will ever taste....;)

yes sir, that is what it is... pay no attention to it though... just buy them and try it.... I guarantee you will love it... It is called Barbacoa when it is completed...
originally, it is cooked with coals in the ground, but this is the more modern way to cook it.... there is alot of grease left over after cooking and that is why you pull the meat out of the crock pot before you tear it all up. Has the most wonderful beef roast flavor you will ever taste....

Nah, wrong flavor for this... try the pico recipe, make plenty, it is also good to eat with just plan corn tortilla chips...

Try it this weekend guys and let me know what you think I do not think anyone will be disapointed.... Where you guys are at they may not be in that much of a demand... and may be cheaper... where I am at they are a staple of weekend cooking and run about $2. less a pound than a T-bone....

If you prefer a leaner type of meat just use a tongue... I know, I know what you are thinking..
wash it off first and try it.. you will just peel the outer skin off before serving.... even I wouldn't eat taste buds gross.... I personally prefer the cheeks because they tend to stay more moist due to the fat content....

Why don'tcha try it with Lengua (Beef Tongue). Crock Pot it with some Garlic and when cooked score the tongue and peel off the skin. What is left is the juiciest piece of beef your ever gona eat. The follow with the Pico and tortillas..

Likewise on the "what is beef cheek.." Could you substitute flank steak maybe? I have seen that around here.

Oh yeah, I had many a LaBamba's burritos when I lived in Indy. I'd go out drinking and start out with a regular, by the end of the night I'd be wolfing down a super.

I would try with the beef cheeks or tongue first, just ask your local meat guy and have them set some aside or order some for you.....
