another one of my crazy flavor pairings...blue cheese and.......

..........honey.

damn, it is delicious. get a hunk of the stinky stuff to room temp. set it on a plate, drizzle it with some good honey. i have some lemon blossom honey from italy.

actually, that sounds like it would be pretty tasty.

We like brie with fig preserves/jam on top and then on a melba toast sort of cracker. Yum!

I'll have to try some Stilton with the honey. I haven't had any good Stilton in the house in a while. THis is a good excuse.

blue cheese and pears is also good. adding honey would only be better, maybe some toasted pecans and simple syrup.

Being a big fan of greenish-blue mold, fleshy fungi and coagulated milk curd, blue cheese with mushrooms is a favorite.

Actually, that's not too crazy a pairing... my wife and I are seriously into cheese and it's not uncommon to see a big blue served with honey, often still on the comb. One of my favorites for this purpose is Bleu d'Auvergne. Some people also like wine jellies or quince paste.

Vash, if you like the balsamic on ice cream bit (I sure do!) you should also try fresh strawberries, stemmed and split in two, with balsamic and a tad of sugar and tossed around to coat. Delicious!

Shaun, in Cambridge there is a shop called Formaggio Kitchen... if you are not already familiar with it I highly recommend becoming acquainted Great selection of olives there as well.

very normal and delicious combo

my local wine bar has a nice cheese plate with honey soaked figs and dried apricots served with a variety of strong cheese.. and the combo of those with a good wine is unbeatable. i love that contrast of the sweet honey and the sharp cheese

im drooling now

I'd omit the sugar, since the balsamic and strawberries are so sweet to begin with .. something that gives a diabolically good touch is some really high quality freshly ground black pepper..

Check out The Flavor Bible by Karen Page and Andrew Dornenburg.
They list ingredients and what makes the best pairings.
Their top of the list for blue cheese: honey (esp chestnut or tupelo), pears, apples, celery, walnut bread.

Do the vanilla ice cream with a balsamic reduction with or without any kind of mashed berries added in. The reduction makes the balsamic into an incredibly sweet syrup.
