Bambi done right!

Took two Venison hams and a wild pig ham, de-boned them and then ran the meat through my food processor...

Last night I seasoned a portion of the meat with garlic and Tony Chachere's seasoning... made them into chopped steaks and served them with a side of veggies.. (sorry, these got devoured, so no pics)

I didn't want to freeze the rest of the meat since it had already been frozen once, so I took some sage and spices and made about 3 pounds of breakfast sausage out of it..

My 10yr old daughter took half of the remaining meat and mixed it with spices and Italian bread crumbs and baked a large batch of meat balls that we are having as subs tonight....

I took the other half of the meat, mixed it with spices and oats, and baked a rather large meatloaf....

I am sure that my cardiologist is thinking the same thing! However, in my own defense, I almost added olive oil to the mix as the meat was so lean.....

No, sadly I cannot claim them... Had a good friend of mine give me a rather large
amount of game... His wife made him give it all away due to him having cholesterol problems... He is going to be on a strict diet of chicken and fish... On a different note, I have owned both manual and electric meat grinders and could never get them to work right (sold them long ago in garage sales)... A couple of weeks ago, I had a large pack of boneless pork ribs, and really wasn't in the mood for them... so I remembered that the blender that we purchased was also a food processor (cheapo from Wally world)... it comes with several blades and it has one that is "S" shaped. I put that blade in, and man let me tell you, that thing makes the best ground meat that I could ever hope for... we also made Italian style meat balls with that meat, but had them with angel hair pasta... The reason I mention this, is for most of us having a meat grinder doesn't make sense,... but if need be, this type of blender/processor really works great...

I have told the wife not to purchase anymore hamburger, for the simple fact that it is over priced and that they add water to the meat to increase the weight... I have told her from now on to purchase roasts when they are on sale and that I will trim them and grind our own hamburger meat... I think from the experience that I have had processing this meat that we will end up with a better quality product at a cheaper price... especially when briskets go on sale....

You should make some sausages. Best sausage I ever had was wild boar and venison. Venison is too lean unless you put some pork with it, if you ask me

Tell his wife that makes no sense. Venison has relatively low levels of saturated fat and cholesterol per serving. About on par with chicken (white meat/skin off). Much better than cow or pig. Or don't tell her, if you are interested in continuing to receiive the bounty.
