That's a "non-Newtonian fluid", right?
A lot like the corn starch and water mixture that you see folks walking on. Actually, I have seen a show or something with a type of bulletproof material that acts sort of like this stuff. Malleable/flexible normally, but gets stiff when hit with a quick hard hit.
